SALSA VERDE

Ingredients:

  • 2 Green Tomatoes
  • 1/4 Jalapeño
  • 1/4 Onion
  • 4 Sprigs Coriander Leaves
  • Juice of 1 Lime
  • 1/4 Ripe Avocado

Method:

  1. Using tongs, char the tomatoes and jalapeños over an open flame until blackened and blistered.

  2. Blend all ingredients (except the avocado) until slightly chunky, then season with salt and pepper.

  3. Mash the avocado, and fold it into the tomato and jalapeño mixture.

  4. Serve with tacos or nachos.
